I'd go for v. 5, it runs as low as an 020, and comes with MacLink Plus.
Opens practically every fileformat you can imagine.

You will feel at home, though I tend to find Claris Homepage easier to use
than Frontpage. Last version was 3.0 (you should go for that version), and
it's nice and simple. I've been using it with an 030 (IIfx), and I'm still
using it on my Beige G3.
BTW, I have an unopened box of GoLive 2 lying around, requires a PowerMac,
8 mb ram and sys 7.5.5. I have no idea if it will run on more recent system
versions, but if you (or anyone else would like to have, mail me offlist.
I'm in Denmark, but we might be able to figure something out).

AutoCad 12 was the last version for Mac. It was for 68k, but there's an
extension or control panel called "PowerFPU" which will make it run on
PowerMacs. My husband runs it on his 2300c, and it seems to work fine, but
it's not very Mac like, and it's probably a not anything like the recent
Win versions either, I'd guess. Not sure which 68k will run it, but a
friend had it running on an 040 (Q800).
There are other Mac Cad software, like Cadintosh from
http://www.lemkesoft.de (the maker of GraphicConverter). For other
suggestions, go to: http://www.architosh.com
