Finally solved it!
When nicknames persist in the Message To menu in EUDORA, even though all nicknames are turned off, or even removed from the parent folder, the fix is to rebuild the .toc files in the Address Book(s). Hold down OPTION while opening the Addressbook with the mouse, forcing Eudora to rebuild these files, and clearing the Message submenus. Whew, that took a little digging!
