Most, if not all, PCI-based video cards for the Mac OS will work in your 
PowerCenter.  I've had good luck with a 3DFx Voodoo3 2000 PCI card (I 
had to flash the ROM - minor hassle), and folks on the list have also 
had good luck with the 3FDx Voodoo5 5500 PCI card, which has tons of RAM 
and a good price.  Note that 3DFx is no longer in business, and there 
likely won't be any driver updates or OS X compatibility (not much of an 
issue in a PowerCenter).

ATI's Rage Orion, Rage Nexus, and Radeon PCI cards are all wonderful 
cards and will work great with your PowerCenter.  The Radeon is a great 
card - very modern.

ProFormance cards are also very nice, though they are a bit on the 
pricey side.  Still, they have a 3D glasses option that makes playing 
racing games (such as "Star Wars: Episode 1 - Racer") a lot of fun.
