Hi again!

OK, so I have this Power 120T.  Theoretically, if it had a big enough 
hard drive, and a Sonnet upgrade (G4), could this thing run OS X?

The answer is YES, but you will probably need to use XPostFacto to get it up 
and running. It is a free download.

You need at least a 3 gig hard drive (Get at least a 20 gig, you will need it 
eventually) and a minimum of 128MB of memory (256 or more is recommended). 

A DVD ROM should also be installed for installing off the OS X disks.
