You can drag-select, shift-click, or select all (command A) in the
attachments list then double click to open them all.

If you enabled automatic StuffIt decompression, the uncompressed files
should appear in the attachments list in place of the stuffed file. What
you describe is what happen if you uncompress the attachment manually by
double clicking it (but I agree that this could be improved).

This one is a bug in Entourage/Outlook Express Mac.
