Well, I don't know. A few people had a similar problem, but I don't remember of a unique solution. Some had installed a third party dictionary, some had something corrupted in their preferences... You can start by repairing the disk permissions using Disk Utility. Then you can try removing files related to spell checking from your home/ Library/Preferences folder. You can also check if spell checking works from another Mac OS X user account, and eventually move all your files to a new account...
