I agree. Observe that 75% of email correspondents don't bother to trim any quotes from a reply at all. This is rude, because a simple thread can become several pages long within 5 replies.
The other 25% have the good sense to trim quoted text in a reply. Well, think about this. If you are considerate enough to worry that the signature should be dropped from quoted text, you are considerate enough to trim additional quoted text anyway. So how much work does it save to have the application parse the reply for you? For a few people, it would be a nice feature, but I believe it would be a very few.
