You need to install the Greek Language. Unfortunately for Mac OS 8 and 9
Apple never released a language kit for modern Greek. There is a patch
that should work though:

The only other option is to install a full Greek OS on your computer (not
something I would recommend), but you could do this and then use a
startup manager and switch between operating systems at startup if you want.
