By default, the display name is filled automatically with the first name
followed by the last name. If you change the "name format: displaying" in
the address book preference pane, then it will be filled automatically
with the last name first (for new contacts you create).
You can also choose "view options" menu, and make the "first name" and
"last name" columns visible, and sort the address book by last name.
The "name format: parsing" preference is used when you add an address of
a received message to the address book, to determine how the full name
should be parsed.
