I don't think that you can search via headers directly, but a possible workaround occurs to me: Filters *can* recognise specific headers. So, create a filter that looks for the header field that you want to search for, and set it to assign a particular label to any message with that field. Run this filter through all your messages (a bit tedious, I know) and then search for that label. (Only works if you have PM 4.2 of course).
