My guess is that more people now use "> " than ">" and that just about
all current email clients can handle it properly. The only problem the
additional space itself might cause for an email client would be in
recognizing nested quotes, and that would only result in all levels of
quotes being displayed in the same color. The quotes would still be readable. 

BTW, a proper signature should be preceded by a line consisting of "-- ".
