As long as you use the following in AppleScript with your text strings:

as unicode text 

your encoding will be correct. However, FileMaker as it stands right now
cannot handle double-byte characters without using a special version of
FileMaker, so I doubt your tool will work properly. This is really an
issue with FileMaker, not with your tool or AppleScript.
