Addresses saved by PM but not by the user show up with the "@" sign in the Recipients list. I don't know how to manually delete them or how to adjust the time that they are kept.
However, I think there is already some mechanism for clearing out the "@" addresses which are automatically stored, because these disappear from my lists after a few weeks if not used. Could this be tied to when things are deleted from the Trash? Maybe someone has a script which can delete them manually. If no one responds to this thread you might want to start another one to ask about that.
