In terms of experimental measures that are derived from an
operationalised cognitive theory, one could consider:

1. Memory (reconstruction/recall/recognition) measures
2. Information-finding measures
3. Problem-solving measures

(please add to list as you like - but I would expect each of the 
above to have reasonably clear relationships to a source code entropy 
estimate, under appropriately controlled conditions)
