Did you use the 'printmgr' to set up the printers? If so they should 
have PPD definition files that can be edited for your size of paper and 
   default paper tray  (sorry I forget the location of this file).

Sorry I don't know about the other questions, but for Mozilla if you can 
see the printers configured with 'printmgr', and have changed the PPD 
file(s), then it should work okay.
