If on a PC, once you've typed in the e-mail/web address and it has turned 'linkified', you can then right click over the link and choose remove hyperlink from the menu
You can also just Ctrl-Z if you spot it happens, that removes it too, as it was the last thing done, albeit automatically. I'm looking for how to turn it off permanently, I'm sure you can do this for each file but forget how.
