Before jumping to OS 10.x.x I was able to get very good prints (for family
and friends; hanging on the walls at home) using my Epson 870.

But once I moved to OS 10.x.x I have had an incredibly difficult time
getting a good print of any kind. The colors come out, well, bizarre; these
are colors that nature never intended. :)

I am far from a color expert the likes of some of those that populate this list, but it sounds like you have a similar situation to mine which is a driver issue than color/profile issue. I have a few printers, and one of my proof sheet/general use printers is a Canon 550i (US). I almost returned it when I printed using the "OSX" drivers Canon provided via their website. The prints looked horrible, off color and strange artifacts. As luck would have it, I had to restart in 9.2 for some reason and decided to load up the 9x driver and try again before giving up. Sure enough, not only were the prints perfect from PS7 running in 9.2, but there were all kinds of controls available that were not in the OSX driver. From this experience I gather that Canon's OSX driver is just some kind of patch that will allow the printer to function, but not function correctly with X.
Morale to the story is that maybe you have a similar situation. Possibly someone on the list has the Epson and can comment specifically on it's X drivers, or you could check Epson's site to see what they say.
Try a print from 9 (if you can) and see what happens.
