I too have just been trying to find out how EXIF actually works. Where did you find the colour space in EXIF?
I know the question has been asked before and the answer was to create a blank document in PS and move the image into it BUT is there a quick and easy way of deleting all EXIF data automatically? It seems this will become an issue with newer, future versions of PDF and Acrobat which have advanced error checking systems. If the original capture has colour correction made to it the capture data stays with the file and could then be reset negating any colour correction. For instance if the capture was set to tungsten and you change to daylight the tungsten tag stays and will be what Acrobat thinks you meant to have. Just another thing to get neurotic about.
