If you set your PS working space to A98 and choose CM4 on the camera recording menu, you may find that your jpegs appear more vivid. Useful if you are shooting jpegs only. If you are shooting RAW you can assign your PS working space at the processing stage in ACR.
You can also use the Canon FVU software to adjust and save tone curves on a test image and then load the saved curves set into one of your sets of 'parameters' (recording menu) on the camera. This may be a solution if your camera is consistently under exposing... although you might want to get the camera checked out! I have only found the FVU utility of any use for setting a personal white balance for my studio lights to load into the camera... which is a handy feature.
