I've been having the same problem (all 3 Epson printers periodically 
stop working - they are listed in the Print Setup utility, but when 
trying to print the printer's own utility always reverts to 'stop 
jobs'.

So far reinstalling the drivers has worked (make sure you've got the 
driver called SC1160(USB).  Might be worth repairing permissions in the 
Disk Utility for good measure before reinstalling.

If anyone know a cure for disappearing printers in Panther, it would be 
good to hear it.  It's getting very tedious...

P.S.  Have just spent an hour of trial, error and wasted paper trying 
to centre an A5 Xmas card.  Got there in the end, but will it one day 
be possible to print A4 on the screen on to an A4 piece of paper on the 
1160?
