I recognise this as one of the many strange behaviours I have 
experienced with the OSX/2100 drivers. I'm pretty sure I resolved it 
after upgrading to a new driver last year.... On the other hand, maybe 
it was fixed by saving presets in the print dialogue box.

Now if only I could swap Matte and Photo black inks without having to 
re-install the driver each time!
