iView Media Pro would be worth considering as it will do this if I understand you correctly ie. cross fade etc between two QT movies or a movie and series of photos. It has the benefit of being far faster to create the show than something like iMovie as you can just catalogue a folder, rearrange the media in the browser and hit play.

I don't think there is anyway to to seamlessly move between one 'show' and the next if what you intend to do is create a series of QTs and photos, start projecting them and then add more in as you go, at some point you will need to start a second show, a brief manual fade to black on the projector may bodge it - if you find an elegant way let me know!
