But some people are saying now that it's better to edit in CYMK to not have to deal with out-of-gamut colors....
There are all sorts of pros and cons to working either way. Your best bet is to be well enough versed in either to select the best for the task at hand. If the ultimate goal is a CMYK image then yes at least some editing in that space is often desired. If you've not done much CMYK editing, an advantage that's often missed is that more subtle edits are often easier to achieve... especially in deep shadow detail editing or subtle color shifts. In RGB editing the slightest move on a curve may produce a rather large change to the image. Adjusting a CMYK curve almost always requires a much larger move to achieve the same affect. That makes creating very subtle changes easier to do. And manipulating the black channel is a useful way to control shadow detail in ways that are difficult to achieve in RGB
I do most of my editing in RGB because like most photographers that's where I'm most comfortable. I just think in RGB terms a little easier. But I recognize the value if CMYK editing skills and am trying... slowly... to improve them. I've done enough to see that there's definitely advantages there. Its worth making the effort to learn.
