My understanding is that the perspective of the "normal lens" (in whatever format) appears (when viewed on the print or other media) corresponds closely to what the human eye sees. I may be using the term "perspective" incorrectly, so what I mean by the term is that if you held the print up in front of the actual scene, you would not notice any obvious wide angle or telephoto "effects" in the print. It would look, well, normal (i.e. the way your eye sees). Since I am not sure that I know what I am talking about and never tested my understanding with an actual photograph, my comment is just a guess.
