I second Neil's recommendation of the book he co-authored: it clarified colour management for me better than anything else I'd consulted, and taught me things about Photoshop too. Excellent value, put it on your Christmas list. And my other bookshelf favourite is Blattner & Fraser, Real World Photoshop CS - accessible but not over simplified, comprehensive, readable style without being either professorial or gushingly matey... I plan to get their book on RAW too.
