Hello ,

  Profile is not installer. I m using profile to configure plone, adding 
workflow, "change the title of the site", "configure my content types"... 

  So no need to have an uninstall profile.

  Next, each products declare a profile to configure it self.This is used to 
be able to make a profile that include this product in a more easy way. (just 
copy paste content of this product's profile in your own profile)

  1 project = 1 profile

But, in GenericSetup i hate the setuphandler.py "way". You have to restart 
zope each time you modfy the file, this is not the case with 
Extension/Install.py

  Finally just a zcml to register your extension profile, so if you remove the 
product and restart, your profile is no more in portal_setup.

Using GS but not for install purpose, just for configuration purpose.
