In the end I guess it is a matter of taste and what you feel more
comfortable with.
That said, event subscribers are the "new school" and potentially
more flexible. In particular, if you want to share your code or
reuse it elsewhere or apply the same script across many workflows
and transitions.
The externals methods are the "old school" approach. They have to
be declared within each workflow's scripts folder for which they
should be available and they need to be explicitly set on each
transition where they apply.
Depending on the amount of control you need versus convenience
I'd go for one or the other.
And there are content rules ...

Just the changes should be sufficient.
If not, that's a bug.
