so far as I know, there is no such documentation as yet.  There used to be a
tutorial on extending zopeskel in the plone documentation section, but it
was pretty out-of-date two years ago and even more so now.  

I'd love to get something like this into the zopeskel documentation, but
have very little time at the moment to do so.  eleddy has been working on a
project getting all the zopeskel documentation online in a format similar to
that of the plone developers manual.  She might be able to help you get
started writing such a doc, should you have the time to do so.

In the meantime, I'd just start by looking at how a template such as
'archetypes' extends the template from which it descends.  There's a good
.dot graph of the full zopeskel template dependency tree available in the
zopeskel.doctools package.
