SOLVED
In case anyone else ever runs into a similar problem the solution was a
missing "default=[]" in the schema.
What I had was:
# use an autocomplete selection widget instead of the default content
tree
form.widget(managers=AutocompleteMultiFieldWidget)
managers = schema.List(
title=_(u"Engagement Manager(s)"),
value_type=schema.Choice(
vocabulary=u"plone.principalsource.Users"),
required=False,
)
What I needed was:

managers = schema.List(

default=[],
value_type=schema.Choice(
