Dear Andy et al - This behavior would be explained if you're having the same problem I am (see http://plone.293351.n2.nabble.com/plone-styles-not-used-when-paster-built-theme-in-use-tp6071515p6071515.html message in this forum).
Check which stylesheets are being loaded and used for rendering in your browser with and without your product deployed.
