You can test to see if the file is in use before and act accordingly.

You can save the file with a time-stamped name (myfile-20060826-130405.xls).

You can force the other users to open the current file as read-only, which it 
would seem, they should be doing anyway to ensure that conflicting changes are 
not made.

I am sure there are other approaches that the folks here will mention.
