If your non-Windows computer has an open serial port and you can configure the system to print to a serial printer on that port you could catch the serial output on a Windows machine with a serial port and some software provided you can figure out the proper cross-over cable configuration. I did this years ago to a modified cassette recorder before the IBM PC established a hardware standard.
It seems it should be possible to write a program to cause a Windows machine to emulate a printer that writes directly to a file. If someone has written one that should be a good way to go provided the non-Windows system can be convinced to write to another printer. Have fun!
