I finally stumbled across the solution to this behavior. If you have the finder toolbar showing, there is a control "Arrange" -- if you choose any of the substantive choices (by date, etc.) the headers in the finder window lose function. If one chooses "none" -- the headers revert to the familiar, less annoying form. I know nobody cares about this but me, but since I found the answer, I thought I'd share.
