So XP machines for example will always use SMB v1. Windows 7 connected to Server 2008 or later will use SMB2. Windows 8 connected to Server 2012 will be SMB3, or SMB2 if connected to earlier than Server 2012. SMB2 is (these days) generally not an issue assuming clients and server are up to date in terms of service packs and Windows Updates.
