In my version of Outlook (2010), when editing this email, there is a Format
Text tab. There are three options for the email type. 
HTML, Plain Text, and Rich Text.

I send mine has Plain Text.

Under File, Options, on the Mail page, there is an option to "Compose
messages in this format:" That is a system wide setting. You probably don't
want to change that one.

If you have time, research how you can add a macro that will configure the
email when you reply to lists. I finally did one afternoon.
