There's no such thing as Windows Server 2007.

If they mean Windows Server 2008 or 2008R2 then there is nothing
stopping Windows 10 clients working with it per se. It would connect to
anything down to Server 2000 probably, if you enable SMB 1.0 and CIFS
support.
