I assume the stab to the back is to force the prisoner, who is in a kneeling position, to involuntarily arch his back while tilting his head backwards, thus making it easier for the executioner to place a single shot from his pistol to the head of the prisoner. The stab to the back followed by the shot to the head occur as a single move or motion.
After seeing pictures of other methods used to execute the condemned in China, it appears to me that there is no standardized method of capital punishment in China and the method used may vary from one location/authority to another. There may even be summary executions in China for all I know.
