Paul,
Take a look at MacroExpress, it is cheap ($30 I think) and will do
everything you want plus more such as storing macro's keystrokes etc. It is
in fact a full programming language per se.

I have a look at a couple of clipboard utilities/extenders (ClipX and
ArsClip) but neither of them supports what might be loosely called macros.
What I am looking for is something wich will allow me to define something
like this

"Paul Newton - "<Date>" "<Time>

Which when pasted will insert my name and the current date and time (in any
application)

Any ideas ?
