Yeah, but what about when the data resides on box A with operating system
version A and production is on box C with operating system B?

Anytime you co-mingle production data and test data and you have the
possibility of somebody forgetting to change the switch, you have a recipe
for a very big ???? Up.

That is why you have a test harness that you can point to ANY service you
want.  Run that series of tests and say it works here and there but not
AAAA.

This isn't rocket science.
