Personally I would go for 2GB or 4GB RAM and Windows 7 Professional x64,
on a CPU that supports hardware virtualization, which is some Intels and
most AMD. Don't shy away from AMD, by the way. This will allow you to
run anything that absolutely requires XP in XP mode. 

That's assuming you want to go Windows of course. You could run a
heckuva Linux box and just use a VM for your Windows software.

And the extended warranty is usually a good idea.
