With the Apple devices, Objective C is the only show in town in terms of developing something that runs on the device. Yes, you can use higher level toolkits to develop with ultimately all they do is generate an Objective C project in the required format and deploy it. With Appcelerator and PhoneGap, you use Javascript. With RhoMobile, it's Ruby.
