Both OS should be fine. There are more packages available for Debian out of the box, so for CentOS you may perhaps need to compile some. But CentOS is binary compatible with RHEL, which is binary compatible with Scientific Linux, which is what our servers use here at CERN. So you should have no problems with CentOS, and even if you get some troubles, then chances are that we saw something similar on ScientificLinux too, and so could help.
