if you have installed the demo site (a.k.a. Atlantis Institute of Fictive Science), with $ inveniocfg --create-demo-site --load-demo-records you should have an installation with several pre-existing collections and some demonstrative submission interfaces (available if you click on the "Submit" link in the top of the window). These submission interfaces and workflows are one of the most complex and flexible parts of Invenio configuration. You can administrate them via the corresponding "Configure WebSubmit" link in the "Administration" menu (I am assuming the English localization of the website).
