One option available in the latest versions of Bugzilla is the
"Classification" field, which lets you group Products together. You
might use this to classify mozdev projects by category, although I'm not
sure how much this actually reduces the UI "mess". What specifically is
hard to manage in Bugzilla when the list of projects grows too long?
