It highly depends on how much data you ingest per server. Just monitoring basic node metrics is pretty cheap. But monitoring a dozen services per node can require more Prometheus instances.
At a minimum, you probably want to have two instances for HA. Without a lot more detailed information on what exactly you want to monitor, it's hard to determine exactly. It could be anywhere between 150:1 and 1000:1 monitoring to node ratio.
