Ahh, I see, yes, it looks like that was added in msqld_exporter 0.11, so you would have to run 0.10 or older.
It looks like lock_wait_timeout <https://dev.mysql.com/doc/refman/5.7/en/server-system-variables.html#sysvar_lock_wait_timeout> was introduced in 5.5. It looks like the way we implemented this is always enabled. I would accept a PR to make it optional.
