I don't know of a way to do this, if I understand you correctly. I'm not exactly sure why you would want to do this. As Cliff said, you can select direct or relief connect for SMT pads to a polygon, but I know of no way to get it to fan out to a via and then connect to a polygon since the pad and polygon are on the same net.
