In your Droppable, you have the onDrop callback function to play with.

 From that page:
Droppables.add('shopping_cart', {
        accept: 'products',
        onDrop: function(element) {
                $('shopping_cart_text').update('Dropped the ' + element.alt + ' 
on  
me.');
        }
});

You could make this:
Droppables.add('shopping_cart', {
        accept: 'products',
        onDrop: function(element) {
                element.addClassName('foo');
        }
});
