I don't understand this error. You should have a file libspread-sheet-widget.la 
in the top build directory so libtool should be able to find it.  It certainly 
works for me.

Maybe setting LD_LIBRARY_PATH will help, though it shouldn't be necessary.

Failing that you could take the demo/demo target out of your Makefile since it's
not necessary for installing the library.
