Chi-Squared can be calculated either using CROSSTABS or NPAR. See the manual at http://www.gnu.org/software/pspp/manual/html_node/Statistics.html In the case of NPAR, there's no GUI input, so you'll have to enter the syntax manually.
Unfortunately ANCOVA is not currently supported. Hopefully it will be in a future release.
